Ingredients

  • 1/2 cup plum sauce

  • 2 tbsp soy sauce

  • 1 clove garlic (chopped)

  • 1 tbsp grated ginger

  • 500g pork fillets (sliced)

  • 500g hokkien noodles

  • 2 tbsp vegetable oil

  • 1 red capsicum, (sliced)

  • 200g button mushrooms (sliced)

  • 200g broccoli (sliced)

  • 1/2 cup chicken stock

  • 2 red chillies (chopped)

Method

  1. Combine 1/2 cup plum sauce, 2 tbsp soy sauce, 1 clove garlic (chopped) and 1 tbsp grated ginger in a bowl and stir. Place 500g pork fillets (sliced) in a bowl. Pour over half the sauce. Stir to coat. Place 500g hokkien noodles in a bowl. Cover with boiling water, stir with fork to separate, then drain. Heat 1 tbsp vegetable oil in a wok and stir-fry half the pork over high heat until browned. Remove and repeat with remaining pork. Remove pork and add 1 tbsp vegetable oil. Stir-fry 1 red capsicum, (sliced), 200g button mushrooms (sliced) and 200g broccoli (sliced), and over high heat until tender. Add noodles, pork and sauce to wok with 1/2 cup chicken stock and 2 red chillies (chopped). Stir-fry until heated and serve.
