Strawberries and grapes marinated in champagne, mint and lemon

Ingredients

  • 2 punnets strawberries

  • Bunch black grapes (about 200 g)

  • 500 ml champagne (or sparkling wine), plus a splash extra

  • 1 cup caster sugar

  • Zest of 1 lemon

  • 1/2 bunch of mint, leaves torn

Method

  1. Hull the strawberries and halve them if big. Pick the grapes off the stalks and place in a large bowl with the strawberries.

    In a saucepan, bring the champagne, sugar, lemon zest, mint and 2 cups of water to the boil, stirring to dissolve the sugar. Turn the heat down and simmer for 5 minutes. Pour the liquid over the fruit and cover with clingfilm to seal in the flavours. Once cool, serve in martini glasses with a splash of extra chilled champagne on top. (Drink any leftover liquid!)
