Quinoa is gluten free and low GI. It's a complete protein, which means it contains all the essential amino acids the body needs to repair. It's also a good source of lysine, important for tissue growth and repair for young, growing bodies.
200g whole raw quinoa
1 tbsp flaxseed or chia
375ml milk (soy, almond, dairy or rice milk)
1 tsp vanilla
1/4 tsp ground cinnamon
2 eggs
1/2 tsp bicarb soda
2 bananas
strawberries and honey to serve
Combine quinoa, flaxseed, milk, vanilla, cinnamon, eggs and bicarb in a blender.
Soak for at least one hour. It's best to do this step the night before.
Blend the mixture until smooth and creamy. Mash the banana in another bowl then pour the pancake mixture into the banana and fold through.
Cook pancakes in a pan over a low to medium heat until golden. Serve with strawberries and a little honey.
