Getting into a pickle over a vegetable this spring is probably the best thing you can do for your digestive system.

Ingredients

  • 6 limes or lemons

  • 4 cardamom pods, seeds removed

  • 1 tbsp whole cumin seeds

  • a cinnamon stick

  • 3 cloves

  • 1 tbsp sea salt

  • 6 tbsp lime juice

  • 1 tsp chilli powder (optional)

Method

  1. Cut the limes into quarters. Sprinkle with the salt and spices. Place into a sterilised jar and pour

    the lime juice over the limes.

    Cover tightly and keep in a warm place for a week or until the skins

    are tender.

    Shake the jar daily.

    When ready, keep refrigerated. Serve with curries, salads or grain dishes.
