Getting into a pickle over a vegetable this spring is probably the best thing you can do for your digestive system.
6 limes or lemons
4 cardamom pods, seeds removed
1 tbsp whole cumin seeds
a cinnamon stick
3 cloves
1 tbsp sea salt
6 tbsp lime juice
1 tsp chilli powder (optional)
Cut the limes into quarters. Sprinkle with the salt and spices. Place into a sterilised jar and pour
the lime juice over the limes.
Cover tightly and keep in a warm place for a week or until the skins
are tender.
Shake the jar daily.
When ready, keep refrigerated. Serve with curries, salads or grain dishes.
