The first nutty, buttery avocados of the season are here, with successive varieties arriving as the months become cooler. The fruit matures on the tree but ripens when harvested - firm avocados can take two to six days to ripen at room temperature.
Mix wasabi powder to a paste with 2 tbsp water. Stir in soy sauce and chives. Process avocado, lemon juice, cream, pepper and salt in a blender until smooth.
Gently mix tuna with wasabi mixture. Spoon avocado mixture onto 6 chilled serving plates, top with tuna pieces and surround with cress leaves.
