Cooking for a husband and three kids is challenging at the best of times. For Homecook hero Kumiko Drinkwater, the challenge comes with a twist. "We don't have hot water in the kitchen," Drinkwater says. "There's only a tiny sink, an old stove, and [until recently] we didn't have a microwave."
2 carrots
1 medium potato
1 onion
1 cup self-raising flour
200ml water
A pinch of salt
Soy sauce
Cut carrots and potatoes into 5mm strips and slice the onion into pieces of a similar size.
In a mixing bowl combine the flour, water and salt, but don't mix it too well - just stir three or four times. Add the vegetables to the batter mixture and stir through.
Take one tablespoon at a time of the vegetable and batter mixture and deep-fry it in hot oil for about two minutes or until golden brown.
Serve with soy sauce, diluted with water to taste, as a dipping sauce.
