This simple Swedish "prawns on toast" is great as a half-serve for an entree, or as a full serve for a perfect light lunch. Best of all, it's as simple as anything.

Ingredients

  • 2 cups cooked, peeled prawns

  • ½ cup mayonnaise

  • 2 tablespoons sour cream

  • 1 teaspoon dijon mustard

  • 2 tablespoons finely chopped fresh dill

  • 25 g unsalted butter

  • ¼ cup whitefish roe* or salmon roe

  • 4 slices white bread

  • salt, to season

  • lemon wedges and dill sprigs, to serve

Method

  1. 1. Roughly chop the prawns into large chunks and combine with the mayonnaise, sour cream, mustard, and dill. Season with salt to taste. 

    2. Heat the butter in a large frypan. Remove the crusts from the bread and fry the bread until golden brown on both sides, pressing to flatten the bread slightly. 

    3. To serve, top the fried bread with the prawn mixture, place a generous spoon of roe on top and serve with lemon wedges and sprigs of dill.
