These nuts have it all - salty, sweet, spicy, aromatic and crunchy, they are the perfect nibble with drinks at your next gathering. The original recipe came from the Union Square bar in New York where they have been serving up these yummy nuts as a bar snack for decades. Only slightly more complicated than opening a packet of nuts, you’ve got to try these at your next party.

Ingredients

  • 2 & 1/2 cups mixed raw nuts (I like cashews and pecans)

  • 2 tablespoons fresh rosemary, finely chopped

  • 3 tsp brown sugar

  • 1 & 1/2 tsp salt (or to taste)

  • 1/2 tsp cayenne pepper

  • 2 tablespoons butter, melted

Method

  1. Turn your oven on to 200°C.

    Line a baking sheet with aluminium foil and place the nuts onto the tray. Bake for around 10 minutes or until slightly golden around the edges and is beginning to get aromatic.

    Meanwhile, in a small bowl, stir together the rosemary, brown sugar, salt, cayenne pepper and melted butter.

    Pull the toasted nuts out of the oven and immediately pour the spice and butter mix over the nuts, stirring to coat evenly.

    Serve either warm or at room temperature. These also make fantastic gifts in jars. This quantity will fill around two small mason jars or jam jars.
