Until this year, our homecook hero, Neill Johanson's cooking repertoire was confined to the weekend barbecue. "I was a pretty ordinary cook. I could do a mean T-bone, but that was about it," the architect and father of three says.

Ingredients

  • 4 cups water

  • 1/2 cup sugar

  • 2 split vanilla beans

  • 6 large peaches, halved

  • Juice of 1 lemon

  • Fresh mint leaves

Method

  1. Boil water in a saucepan and reduce to a simmer. Add sugar and vanilla beans and simmer until sugar dissolves.

    Simmer peaches in water for 2-3 minutes each side. Remove peaches, allow to cool and peel off the skin.

    Reduce remaining syrup by simmering for a few minutes. Remove from the heat and, when cooled, add lemon juice and mint.

    To serve

    Serve peaches and syrup with vanilla ice-cream.
