Parlour won’t stay bare

Ross Sydney hopes to start the fit-out at Parlour Wine Room in August, with a plan to open at the beginning of October. Sydney plans a similar set-up and style to the former Parlour, pictured, a popular wine bar that focused on very good wines, tapas and table service in a lounge-feel setting. He and daughter Bria Sydney, who ran Parlour, are still looking for chefs for Parlour and, in the meantime, Bria is still running Elk and Pea, which opened in Lonsdale Street earlier this year.
