Chilled rose is a terrific summer drink. Many Australian versions are too sweet and heavy, but this is a good rose: it's savoury, clean and dry on the finish, and has some entertaining complexities of flavour - more than shrill bubblegum fruit. Colour is mid-salmon pink; the bouquet is smoky, toasty and savoury. Flavour is light- to medium-weight and dry, but soft. A thoroughly enjoyable drink and very food-friendly; it was made from little-known aglianico. Beautifully made by Sandro Mosele at Kooyong and grown by those alternative variety specialists, the Chalmers family. Best enjoyed young. 12.5 per cent alcohol.
Food: Cold seafood, cold meats and salads, antipasti, vegetarian dishes, or serve it solo as an aperitif.
Stockists: Bellevue Hill Bottle Shop; Northbridge Cellars.
