US-based food website Eater has released its third Melbourne Heatmap, a list of ten of the city’s hottest new restaurants and bars.
The list was compiled by Melbourne Food and Wine Festival gastronomy program manager Sharlee Gibb, and includes The Age Good Food Guide 2014 best new restaurant, Saint Crispin. Bomba in Lonsdale Street, which also made the list, only opened last Thursday night. The former Aylesbury is still co-owned by chef Jesse Gerner and his wife, Vanessa, with partners Shane Barrett, chef Andrew Fisk and front-of-house manager Kelly O'Loghlen.
Speaking to Epicure recently, Gerner described the reinvented the 60-seater as a "modern-day bodega", with a menu of "classic stuff like paella, beef cheek braised in Pedro Ximinez." The rooftop bar from the Aylesbury days is still operating and while Bomba is currently open only for dinners, lunches are in the pipeline.

Previous editions of the Melbourne list have featured Rita’s Cafeteria, Rockwell and Sons, Moon Under Water, Rosetta, Baby, Hobba, Attica, The Aylesbury (now Bomba), Henry and the Fox, Spice Temple, Pei Modern, Golden Fields, San Telmo and Albert Street Food and Wine.
