Sydney's love affair with the burger continues. Neil Perry and the Rockpool Group have announced they will be opening a burger joint at Sydney's World Square in late October.

It's the latest in a wave of fine-dining chefs branching into the world of beef patties and pickles: Warren Turnbull traded his fine-dining whites from Assiette to open Chur Burger and Sean Connolly established Parlour Burger in 2013.

Called the "Burger Project", the World Square restaurant will be located next to popular dumpling house Din Tai Fung. Diners can expect burgers priced between $7.50 and $10, as well as an all-American array of house-made chorizo dogs, ice-cream, chicken wings, milkshakes, sodas and shaker chips with seasonings such as Szechuan pepper and chilli.

Perry says the centrepiece of Burger Project will be the open kitchen, with patties made as you walk in.

"It'll be like a little factory at the front where you can watch all the production happen," he says.

"We're using 36-month grass-fed Cape Grim beef, which is the best grass-fed beef in the world. There's some beautiful marbling in the chuck steak."

The burgers will also feature Schulz bacon from the Barossa Valley and gruyere cheese. The Zuni pickle, famous from Rockpool Bar and Grill burger, won't be making the trip to World Square, although Perry promises a new cucumber pickle instead. "I've tried to make things a fair bit different to Rockpool Bar and Grill."

The venue will be licensed with seating for 100 people and the option of takeaway.

Perry is hoping to expand the concept into Melbourne, Brisbane and potentially Perth and Dubai.
