On a steaming summer's day, this finest of fine diners invites you to indulge that little bit longer, nursing a glass from the luminous cellar list, supping a simple chicken consomme while marvelling at the depth and complexity of flavours revealed by each sip. Service is almost presciently attentive and accommodating but never intrusive, leaving guests to indulge themselves in Moran's love of premium produce, treated with painstaking care and presented in a style befitting one of the country's best chefs. Queensland's seafood is given particular attention, with roasted Moreton Bay bugs a stunning highlight.
