Badger: Lucien Kolff, former co-owner of Toby's Espresso Bar. Hawk: one-time Small Batch man Cosmo Hawke. Versus: sounds a bit punchier than ampersand. Result: a white-painted one-room brewbar with a La Marzocco pulling maybe a bright but surprisingly gentle Proud Mary house-blend short black ($3), and a Swedish Moccamaster that does your filter brews ($4) at a constant 93-94 degrees. They brew and bottle a 20-hour cold immersion under the Machete label on site, too. Through the door is a courtyard for coffee sipping and, later in the week, evening drinks with tacos and soft-shell tortillas. This tiny shopfront is home to a Swedish Moccamaster, which brews at a constant and ideal 93-94 degrees Celsius. Beans sourced from Proud Mary and Small Batch means there's always something worth sipping.
