With its vaguely speakeasy vibe (a getaway door leads to neighbouring Gin Palace), elaborate light globules dripping from darkened ceilings, piquant snacks eaten on Futurist tables, and authentic absinthe fountain, this is a bar that puts most others in the shade. If you're there before dinner, try a Carpano Antica Formula vermouth. If it's late, there's a range of vino de Jerez. If you're undecided, informed staff will squirt bitter-sweet Amer Picon into soda, served in a double-walled glass to keep it cold until the last drop. Bar Ampere is where you'll learn how to carouse like a grown-up. Vernon Chalker's latest is an ode to Futurism and the bar snacks follow suit - an eel cigar is served in a test tube and emerges in a puff of smoke while Harlequin kingfish looks exactly as it sounds.
Bar Ampere's slightly hidden, slightly bonkers back room (fairylights, rocking chairs) is a peerless place to shelter from winter's chill with a rye-based Brooklyn cocktail in hand.
