By day, it's a lively CBD lunch spot favoured by pizza devotees. By night it becomes a more sophisticated bar and fine diner. Bluestone, you may have guessed, is housed in an old bluestone edifice, with large gilt mirrors adding a gothic note. At lunch, plates such as free-range chicken breast with parsley and orange skordalia augment wood-fired pizzas, but the serious dining takes place at night. Montana-born chef Cody Cunningham combines globetrotting influences, seasonal produce and the occasional whimsy, such as popcorn atop wild barramundi. Regulars keep the Hervey Bay scallop fishery in business; the bivalves are a menu fixture, served with parmesan and dill crust. Whole rainbow trout, cooked 'backwoods Montana' style with cornichons, garlic, butter and lemon, is perfectly done. To end, you can't beat good old rhubarb and strawberry crumble.
