You won't be consulting the little red book at Chairman Mao, just a brilliant menu that sends your tastebuds into blast-off. Hunanese cuisine is known for its sharp spice; baby eggplant with green chilli is an excellent lip-numbing dish, while the fried cauliflower modulates its firepower with an earthy cumin kick and comfy sprinkle of salt. Not all dishes depend on culinary artillery, though: a radish salad is cool and bracing with garlic, while the fatty chunks of Chairman Mao's favourite braised pork are caramel-sweet and require no code-red alert.
