Chairman Mao

Pork, spice and oil are the key components at this noisy gastronomic temple to the revolutionary leader. The menu shows food variety that was unavailable to most of the Chinese population during the Chairman’s reign and the noble swine features prominently. Mao’s favourite dish, prone to sell out early, is slowly cooked pork belly, its striations of fat and skin rendered to blubbery softness. Crunchy pickled veg add welcome contrast. Lap cheong sausage with tofu bamboo is sweetly chewy, while lotus root with ginger and black beans is another highlight. Keep the tissues handy for brow mopping.
