Pork and prawn salad sits under fresh coconut sauce, while snowpeas pair with tiny, smoky, Chinese sausage chunks. Pig's ear in master stock has the requisite crunch factor, and mushrooms with asparagus are turbocharged with a hit of preserved beancurd.
