Catalina, Flying Fish, Rockpool, Rockpool Bar and Grill, Spice Temple. It's not a bad list for a kitchen brigade to have on its collective CV. Khan Danis, Catherine Adams and Angel Fernandez have had more chef's hats than a kitchen supply store. Now, here they are dishing up pizza al taglio (by the slice) in a bare-bones Alexandria warehouse. Inspired by Rome's famous Pizzarium, the group has slid down the food chain and into the hearts of local residents and workers with their homey, artisanal cooking. A thick, golden-based sausage and peperonata pizza of chorizo, 'nduja, tomato and roasted peppers is pizza you can really get your teeth into. Chunky minestrone soup and chicken and salami cacciatore are comfort food plus; and arancini (rice balls) filled with peas and provolone go from crisp to squish in a single bite. And if there's a nicer way to end a meal than Catherine Adams's flourless chocolate mousse cake, we haven't found it.
