Situated on the water's edge in the middle of the Ku-Ring-Gai Chase National Park, this is a location straight from central casting. Boats glide past and the occasional seaplane lands, sometimes dropping off diners. Sit on the covered deck, sip a cocktail and wait for it - a feeling of serenity. For entree, ocean trout sashimi with avocado puree, daikon ginger dressing and puffed wild rice is delicate, well balanced and almost as beautiful as the surroundings. Another light option is an heirloom vegetable salad, topped with a creamy house-made fetta and hazelnut dressing. For main course, a crisp-skinned salmon fillet is served on a bed of sweet, ginger-infused quinoa that's on the right side of al dente. A thick scraping of its addictively good, sticky soy caramel sauce adds a big punch of flavour. Waiters are knowledgeable but drink service can be forgetful. Consider the peanut butter parfait for dessert, or order coffee and linger, taking in the last glimpses of that top-notch view.
