Set on a gentle bend of the Brisbane River with a city skyline background, Cove is the ideal spot to toast the River City. A glass or two from the comprehensive champagne list should do the trick. Settle into a comfy banquette and whet the appetite with oysters; served up in a plethora of ways from the purist's preference, au naturel, to the signature with Moet et Chandon gel and salmon pearls. Starters are designed to share, although all bets are off when it comes to the salt-dusted chilli jam doughnuts, accompanied by a silky avocado puree and a side of mole sauce. Beef carpaccio, with a 62 degree poached egg and truffle mayo is another dish you'll want to keep to yourself. It's not all just oysters and share plates though, imaginative mains includes dishes such as anise-scented duck with wood mushroom risotto and a Pedro Ximenez reduction and masterstock spatchcock with gingerbread sauce.
