Don't be put off by the sea of pebble-tec parking you must wade through to get to Ebb, cloistered beneath a Maroochydore holiday apartment block. On the other side of its modest interior are serene views of the river, mangroves and pelicans with the vista curving out to sea. Dishes such as house-cured salmon, accented with just a few caperberries and baby bitter greens, or scallops on a risotto sweet with corn, are served simply. They need no embellishment because they're imbued with the confidence of good ingredients, balanced flavours and culinary skill. The cheddar souffle with mushroom mousseline and buttered leeks sounds nothing special but tastes as fresh and light as the view. The staff have a certain coastal vibrancy as well as obvious experience and the wine menu is clear and informative. Just about everything hits the right note in this fine example of simple, elegant dining - a welcome respite for any wary coastal diners.
