E’cco has a casual confidence that comes from being a founder of the city’s contemporary dining scene. Philip Johnson’s menus remain relevant due to his enduring ethos of allowing superb local ingredients to shine within understated, bistro-style dishes. This translates to a plump Moreton Bay bug tail poached in lemon-thyme butter, paired with the delightful salty crunch of golden jamon crumbs – a seemingly simple dish with beautifully layered flavours and textures when combined with a thick, fragrant saffron mayonnaise and fresh fennel salad. Crisp-skinned pork belly benefits from subtle licorice spice and the sweetness of a juicy caramelised half-peach. Desserts such as a velvety mint and lime parfait with raspberry sorbet and little meringue kisses follow suit.
