Embassy XO's ambience adds an individual air to an Asian-infused menu that promises and delivers. Rich colours and modern furnishings make for comfy surrounds, whether stealing a moment at the bar or settling in for an evening of special treats. Hervey Bay scallop dumplings, dotted with salmon caviar and micro greens are packed with the sweet scallop meat, dots of salmon caviar providing a salty foil, while the spanner crab and prawn spring rolls are fun on-table construction. 'Pijiu Yu' rice-crusted snapper, is packed with flavour, braised in Yanjing Beer. Byron Bay pork belly is incredibly moreish, so too is its complementing kimchi, which cuts through the richness. The steamed chocolate buns and raspberry dipping sauce with a chilli bite are worthy of mention. The impressive wine and cocktail list has an assortment of intoxicating lures, the Cherry Blossom, a Choya plum wine, gin and raspberry liqueur combination, the perfect start or end to a meal.
