Tapas are a fine Spanish tradition and it's nice to find a pub that does them (even though they're not the traditional Spanish kind). Steamed prawn dumplings (almost-translucent flexible skin surrounding moist minced prawn) or gremolata-crumbed soft-shell crab (with a punchy chilli soy dipping sauce) are top choices. If you like to cook your own try the mushroom kebabs or lemongrass beef. The Exchange also offers plenty of main choices including enticing options such as hand-rolled ricotta gnocchi with gorgonzola and roasted pinenut sauce, and there's a selection of mains you can cook on your hot barbecue stone.
