The tempura crab with strawberry sorbet might sound an unlikely pairing but somehow the contrast of crunchy, salty, soft and sweet just works, while baked scallops in the half shell with miso butter are sweet and tender. The duo of duck comes recommended with good reason, morsels of meat lightly falling off the bone and partnered perfectly with carrot, beetroot and jus gras.
