Fans and louvres lend an almost colonial air, a fine feat given Fins’ less than exotic resort surrounds. But energy and excitement run high at Steve and Morgan Snow’s destination diner with its terrific wine list (and switched-on wine service) and a luxurious menu that pays homage to the ocean. Wallis Lake Sydney rocks are hard to resist - with sweetish sourdough, locally churned butter, vanilla salt and a lemon myrtle perfumed relish on the side. A Korean-flavoured pork belly with a prawn and green mango salad is, appropriately, all about balance; while a sweet-spiced Moroccan tagine, stacked with vegies, comes with gloriously fresh local snapper. Spanish mackerel with seaweed and ginger is divine, despite a slightly incongruous al dente beetroot and pinot noir risotto. Friendly, relaxed and jovial staff talk you into a rhubarb parfait with an amaretto base, cardamom ice-cream and young coconut. And that, we say, is no bad thing.

And … The indoor bar area works as a themed pop-up.
