There’s so much collagen cooked into the tonkatsu ramen here it will stick your fingers together if you don’t wash them quickly enough. Known around town as ‘the chronic’, the tonkatsu is the go-to dish here and can be tweaked to suit (speak up if you’d like your soup thinner or less salty). Optional extras include soft-boiled eggs and a ‘chilli bomb’ ball of garlic, pork, fried onion and chilli. The faint-of-heart can opt out of the chronic for clear ramen soups such as miso. Take note: tonkatsu ramen is not available between 3pm and 5pm, when the stockpots are emptied.
