Nothing makes food-literate folks more afraid than fusion food. But Horoki has a knack for matching the seemingly unmatchable. There’s tuna sashimi carpaccio-style with bright soy dressing and shaved parmesan. A squiggle of wasabi mayonnaise bolsters a beef tartare that's sweet with quail egg, and a tangle of pasta ribbons arrives buttery with spicy cod roe. Some dishes are an easy match, like crisp tempura with one of the many sake and shochu options. While Horoki’s well-worn bar stools bordering the open kitchen may be easier to snare these days, the East-meets-West heyday is far from over.
