The speciality at Surry Hills' latest Japanese hot spot is katsu - a deep-fried gastronomic gift from the Japanese kitchen that comes in many forms. From two-day braised wagyu cheek with red bean miso, to shredded leek and lamb, or crumbed oyster, they're perfect sake swilling fare. Start with smoky edamame before a stellar chef's-selection sashimi plate that looks like a blossoming flowerbed. The beers flow and the sakes are slammed down fast, but a traditional karaage (fried chicken), while admirable, doesn't quite match some that other Japanese drinking houses offer.
