One dish, so many variations. Choose from nine types (a selection of popular varieties you’d find around Tokyo), each made up of the four essential elements of ramen: the broth, base flavouring (or tare) and egg noodles lurking beneath carefully arranged toppings. The flavours swing from rich and porky – as with a milky tonkatsu with floating fat globules that’s topped with seaweed, bamboo shoots, spring onions and a slice of barbecue pork – to miso-sweet, as in a veg version. In between the two extremes sits the lighter, salty shio style. It's all in one tiny space, with so many fanatics.
