You might expect extravagant, over-the-top food in such a Sydney destination as this mighty revolving tower diner. However chef Michael Moore has your wellbeing at heart - with carefully sourced seasonal produce, and grains, seeds, nuts and pulses to add texture and variety. Not that the cooking is restrained. witness generous slices of grilled calf's liver in a wickedly concentrated sauce, and pastrami with pickles and mustard fruits. In contrast, queen snapper from the 'raw food' selection is light and briny fresh, and there are some lovely touches elsewhere. baby peas amid a side salad's leaves; fresh and marinated strawberries flanking a dense, shiny dome of strawberry milk pudding. With drinkers and diners settled on the perimeter of the tower, the sharp contemporary decor, moody colours, window tables and raised banquettes make the most of the view. but it can be disconcerting to look up from your plate to discover that what goes around comes around.
