Pho 54 Mandalay Bay

A bowl of pho is one of the better meals around. It's filling, flavoursome and under $10. And, around here, the typically functional nature of Vietnamese restaurants such as this (tiled floors, quick service) suits solo diners, families and folks between shops or beer stops. But Mandalay Bay gives that little bit extra; check out those revolving ruby-coloured light-fittings, and the 150-dish-strong menu. There's a good ratio of sauce to stuff, as with smoky fried fat rice noodles with broccoli florets, flower-shaped carrots and baby corn. Coleslaw is a bright, sweet and spicy salad of cucumber ribbons entangled with whole mint leaves, red onion, tender squid and prawns.
