Once you’ve zigzagged between fast-moving pho-laden trolleys and taken a seat, there’s only one thing left to worry about at perpetually busy Pho Hung - choosing from the long Viet-Chinese menu. Vietnam’s treasured ‘breakfast dish’, pho, is a good start, its long-simmered broth boasting complex notes of star anise and cloves, and a tangle of flat noodles beneath slivers of still-pink beef. A vegetarian version may be less nuanced but it’s plentiful and the vegies crunchy-fresh. Other dishes (perhaps pipis in a smoky, addictive black bean sauce or tofu sang choy bao) arrive at a clip - just don’t expect a lot of friendly banter.
