There’s no looking back for the cafe-smart set once they’ve been to Pillar of Salt. It has the triumvirate of cheery service (however flat-chat), 3G coffee (single origin, cold drip, Aeropress), and gee-whiz food. Brekkie (till 4pm on weekends) includes corn fritters with smoked salmon and a bright salad of pea tendrils, avocado, quinoa and ruby grapefruit; fluffy scrambled eggs are bejewelled with julienne bacon, spring onion and red chilli then sprinkled with shredded parmesan. Lunch may be chicken schnitzel with fennel and cabbage slaw. The untreated-brick and wood finishes are familiar, the all-weather courtyard a breath of fresh air.
