They might come topped with seasonal mushrooms, taleggio and truffle oil; for something sharp and sweet, try pancetta, gorgonzola, walnuts and apple with honey glaze. Simple, authentic sauces, such as a cream-free carbonara with lemon zest, accompany earthy pappardelle.
