This is pizza by the book: that is, the 11-page guide to authentic Neapolitan pizza by the Associazone Verace Pizza Napoletana. Only eight pizzerias in Australia have been certified by AVPN, and Pizza Mario is one. And what pizza it is: the blackened, chewy crust, thin in the centre, in rossa (with a tomato base) or bianca (white). The margherita is a must, while other combinations are simple and beautifully balanced: pancetta and ricotta, or gorgonzola, mushroom and ham. Check the chalkboard for the few non-pizza specials, and order a plump panna cotta in bitter mandarin syrup to finish. Semplicemente perfetto!
