Ramen Zundo

With its window of paper lanterns, Zundo is a parody of a traditional ramen bar. Start with pan-fried gyoza and chilli ponzu dipping sauce and move to generous bowls of steaming ramen. Flavoursome tonkotsu broth (made by simmering pork bones for more than 12 hours) is the base of the signature Zundo White, which is topped with tender chashu pork belly, nori and silky house-made noodles. Zundo Black ups the aromatics, laced with roasted garlic oil, and Zundo Red’s got chilli heat. Tonkotsu niboshi ramen is something different; a delicate, aromatic soup with an underlying fishiness from dried niboshi sardines.
