The expansive menu could signal disaster in less capable hands, yet here each course wows you just a little bit more. There's no molecular trickery but rather a deft reinterpretation of classic Italian dishes. A dish of delicate zucchini flowers bearing spanner crab meat is paired with a salad of exquisitely ripe tomatoes. The house-made pasta shines in a saffron linguette served with Moreton Bay bug meat and an ethereal cream sauce. No boring mains here - generously portioned rolled tenderloin of pancetta wrapped veal atop a deeply flavoured jus is lifted by the addition of truffled cream and earthy mushrooms. Classic Italian desserts add to the contentment, particularly when paired with a choice of vintage armagnacs dating from 1959.
