From the exuberant Japanese all-staff welcome chant to pumping music levels, Saké feels like one big party palace, but one that’s serious about good food. Dark wood and sultry lighting break up the large, heritage room, split into seating for all comers - large and small groups, communal diners and private room parties. For the most fun, sit up at the counter and watch a team of chefs in red bandanas work their magic with sashimi and sushi. They also give the classics a mod Japanese twist, as in Glacier 51 toothfish served tempura-style with three types of salt, sweet and sharp dipping sauces. Thinly sliced wagyu is dressed with hot oil and yuzu soy while chirashi sushi is a glorious mix of salmon, daikon tsuma, crunchy salad and sliced omelette. Service is slick and speedy, but allow enough breathing space to include green tea Kit Kat for dessert.

And ... Sit at the counter for live entertainment from the kitchen.
