If Nobu Matsuhisa is the rock god of the sushi world, then Shaun Presland heads one of his most talented tribute bands. Having worked for the celebrity Japanese-American chef - twice - Presland brings a distinctly Nobu-influenced menu to one of Sydney's most exciting sushi restaurants, tucked away in a heritage-listed former wool store. Dishes come in no particular order, but you may well start with the 'signature' kingfish with tangy yuzu soy, topped with green jalapeno and coriander. Chicken nanban surprises the palate: deep-fried, chilled in a vinegary marinade and served with charred spring onions and chilli. Delicate steamed wagyu beef, ginger and chive dumplings are well matched with a spicy-sour dipping sauce. Sushi rolls filled with warm scallops, spicy mayo, cucumber and seared salmon are divided by upright batons of witlof that help cut through the richness. Desserts are slightly less convincing. But tempura (as in delicate, crunchy scampi tails) is as good as it gets.
