With the global Nobu empire as its role model, Sake is turning into a modern Japanese juggernaut in its own right, having opened in Brisbane and Melbourne to popular acclaim. Mind you, it's a bulletproof formula - a character-filled, party-time space combining quality sake, peerless sushi and envelope-pushing twists on Japanese classics, sometimes all in the one dish. A tuna tasting plate for two teams deliciously crisp tuna tacos, expertly crafted tuna and avocado sushi, a mini tuna tataki salad and sugar-rimmed sake shots. Nobu-inspired kingfish jalapeno, popcorn shrimp and miso silver cod are still the big orders, but more recent additions - such as lush steamed wagyu dumplings and a rich mix of slow-cooked pork belly and 64-degree egg - show a constantly developing kitchen. And who needs green tea ice-cream when there's a chic 'kit kat' for dessert - an unwrapped block layered with green tea ganache, chocolate crunch and white chocolate mousse?
