Shanghai Street Dumpling

Double-check which of the city’s three Shanghai Streets you’ll be at to avoid the possibility of you waiting in one queue and your mates waiting in another. This newest outlet has the now-signature dumpling-makers’ booth, and a big open space that dips below bluestone-cobbled Corrs Lane. Most people don’t go past page one of the menu, which lists four types of xiao long bao (eight a serve) including juicy pork and vegetable, without the spurt and with a delicate papery skin. Doughier fried pork buns have crisp burnished brown bottoms. Prepare for last-dumpling standoffs. Also at 342 Little Bourke Street & 64 La Trobe Street, Melbourne.
