The brainchild of sustainability guru Joost Bakker, Silo uses ethically sourced ingredients to create wholesome food entirely from scratch. Flour is milled, bread baked and butter churned around a bench (made from recycled plastic and sawdust) shared by kitchen and customers alike. Re-used, recycled and repurposed items abound in the fitout, underscoring the minimal waste footprint. A pourover of Byron Bay's Mountaintop coffee comes in a rustic Bendigo pottery cup and has a rich mouthfeel, hints of citrus and toffee sweetness. Regular espresso-based brews from the Wega Greenline use a custom blend from Genovese.
