The Uighur (say ‘wee-gur’) people are Muslim, so expect a ton of lamb. They’re also wheat eaters and tandoor cookers, so expect a load of flatbread and other doughy foods as well. Case in point: the stunning paramish, an artful glob of pleated, fried dough with a rich lamb filling. Or kawa manta, large steamed dumplings with finely chopped pumpkin and lamb filling. Homemade noodles come in various thicknesses and with meat/veg combos as toppings, and there are a number of rustic salad-y items to break up all that carb and protein. Lamb kebab is a highlight: succulent, spicy and infused with cumin and chilli.
