Hotel restaurants can be staid but The Lab is a refreshing departure from the typical. Tucked within a beautiful Victorian-era building on the ground floor of the Treasury Hotel, the interior retains the Old World charm with huge arched windows, ornate plaster ceilings and a stately bar that runs the length of the room. Crisp white linen and contemporary lighting combine to create a formal but welcoming space. While there are options for the less adventurous, such as market fish and Coorong Angus beef, they're a skilfully prepared showcase of quality Australian produce. Embrace the sumptuous simplicity of a fat, melting slab of smoked mozzarella, jamon, wild mushrooms, spinach and truffle oil atop brioche, or lift the lid on a fragrant lamb tagine. Desserts too are versatile, from simple brulee and strawberries to a salted caramel mousse, peanut shortbread and pomegranate jelly combination. While the pace of food service might be too swift for some, the service is friendly and efficient.
