The Premises has maintained its old-school buzz since opening in 2010, not just with its fitout (bare wooden tables and classroom chairs), but with its food and service. The menu is contemporary, yet maintains an old-fashioned feel: spiced beans on toast is classic, but labna, coriander and toasted ciabatta make it modern. The pulled-pork is the stuff of legend, a stack of shredded pork, well-dressed coleslaw and a slab of good bread, topped with a house-made pickle. There's also house-cured ocean trout, or creamed corn with a fried egg and cumin salt. And the single-origin or house-blend (Seven Seeds) coffee is superb.
