Hand-cut chips are something of a rarity. Their crisp exterior and fluffy middle can't be replicated with frozen chips. The chips at the Union are the real deal. The kitchen has been revitalised under new head chef Michael Carter. While the regular menu reads well, it's the daily specials that are most popular; you'll find three types of fish (think John Dory on creamed cauliflower with roasted Jerusalem artichoke), along with a red and a white meat (such as pork belly with red cabbage and apple). Serving sizes may be a little small: the perfect excuse to share a bowl of those delicious hand-cut chips.
